GIVE IT A GO – ditch the meat and substitute with NANAK paneer in your Briyani! Absolutely delicious!

Ingredients:
• 500g Basmati rice (soaked)
• 500g NANAK paneer fried
• 300g fried potato cubes
• 1 cup fried onions
• 1tbs ginger/garlic paste
• 1 big onion chopped
• 1tbs garam massala
• 1tbs paprika powder
• 1 tsp turmeric powder
• 2 tbp of oil + 1tbp of ghee
• Strand of saffron infused in half cup of hot water or hot milk
• Small piece of cinnamon stick (cannelle), cardamom (ilaity), cloves (giroffle)
• Grated nutmeg
• 1 cup yogurt
• 1 1/2 teaspoon of salt or to taste
• 250 mixed vegetables (fresh or frozen)
• Chopped greens (coriander and mint) – chillies optional
• Enough water.

Method:
• Boil the soaked rice in a large pot of salted water until half cooked. Removed immediately,
• Drain and let cool down in a tray
• In your cooking pot:
o Add yoghurt, garlic paste, garam masala, turmeric, paprika, cinnamon stick, cardamom, cloves, nutmeg, chopped onions, fried onion, chillies, salt, oil and ghee..
o Add mixed veg/fried potatoes/fried paneer
o Mix again and add enough water
o Cover with a first layer of half cooked rice. Sprinkle some saffron water and fried onions on top. Then repeat with a second layer of rice. Top with saffron, ghee and lastly some fried onion
• Cover very tightly and cook on medium heat until done
